Gaiwan (蓋碗/盖碗; direct translation – “bowl with lid”) is also called 蓋杯 (Guy Bey – “cup with lid”) or 焗盅 (Jeou Chung – “heat-resistant vessel”). The word “Gaiwan” is the modern name of the vessel. The word is borrowed from the People of Chao Chang, who called this vessel “Chaou” (茶甌).

Chaou – a set consisting of a cup, lid and a plate; it can be used just as well as in harmony with tea cups. Tea cooking in Chaou is used when it is necessary to try tea, for example, when buying. In such cases, it is important to maintain the neutral taste of the tea; it is also important to see the tea leaves when they boil and get a sniff of them. This way of cooking tea is also used on a daily basis, but more is used precisely in formal situations. Chaou’s can boil different teas, if most of all this way of cooking is suitable for weakly fermented tea varieties.

  1. Boil water or heat to a temperature suitable for cooking tea.
  2. Warm chaou with boiling water
  3. Throw in the tea leaves.
  4. Rinse the tea leaves and slowly pour out the water.
  5. Pour 2/3 of the water along the wall of the dish.
  6. Wait 30 seconds, pour tea into cups.
