In China, there are two types of trees from which tea leaves are collected. Young green – does not allow itself to grow much and does not allow to form new varieties. Therefore, they exist in a monotonous and almost unchanged form. In the depths of tea forests grow old trees, which constantly mutate for several and various crossbreeds. Such natural changes lead to the appearance of unusual colors (from purple to burgundy) in the leaves and give tea a special taste.
Hieroglyph 坦, which denotes the color of the leaves, corresponds to “purple” in Estonian. Purple leaves produce a special pigment, which is usually inherent in plants such as blueberries or cherries. Due to these pigments, tea gets a special taste and aroma. But not all porridge producers consider the differences in colors to be important, and the leaves are often confused with other varieties. Others believe that there are very few such lilac trees to pay special attention to them, to create a porridge as an independent raw material. But there are also people who appreciate the tea with a special taste and delicate aroma obtained from this species.
